Description VITICULTURE Carlos Sumarroca is one of Spain’s most important and awarded agriculturists and together with his wife Nuria the enterprising couple set about establishing Sumarroca as the largest estate grown Cava producers in Spain. They practice sustainable farming, harvest at night, and only use free-run juice. Combining their passion for the land and tenacity in cultivating vines, their Cavas have bags of personality and character. The Pinot Noir comes from the vines surrounding the winery. The soil is composed of sand and gravel, with a high limestone content. The climate is Mediterranean, with mild winters, wet springs and hot summers. WINEMAKING For this cava, only free run grape juice (approximately 50% of the must) is used. Fermentation in stainless steel tanks for 17 days at 15 degrees, 8 hour maceration, before the traditional secondary fermentation in bottle. OAK TREATMENT None. TASTING NOTE A bright pink colour with slight beading of persistent bubbles. A very intense cava with elegant notes of red fruit and strawberries combined with floral hints. Fruity and unctuous in the mouth, with a delicate finish. FOOD MATCHING A versatile Cava that works well with meats, pasta and tapas.
