Description VITICULTURE Only grapes from Squerryes own vineyard are used, always. The vineyards is extremely proud of the flavour and aroma that are attributed to the terroir, and something they know they are very fortunate to have. So fortunate in fact, that other people have been very interested in the land. Back in 2004, a Champagne House visited Squerryes to try and buy some of it. A geological survey had confirmed that the chalk escarpment had qualities similar to the esteemed “Cote des Blancs” region of Champagne. Along with the soils, the long moderate summers and cool evenings provide the perfect growing conditions for the Chardonnay, Pinot Noir and Meunier vines. WINEMAKING 100% malolactic, whole bunch pressed and naturally settled for 24-36 hours. Fermented first in stainless steel tanks, secondly in the bottle with champagne yeast. Aged on lees for 36 months. The 2016 reflects the natural energy and purity of the North Downs vineyard. The white chalk seam that sits below the vines acting as nature’s best filter, removing any impurities creating a wine that is very soft and clean with a lovely smooth finish. OAK TREATMENT No. TASTING NOTE Pale straw in colour from the increased amount of Chardonnay with a distinct, fine mousse. Lovely orchard fruits: baked pears with a hint of spice and creaminess on the nose. On the palette it has an abundance of rich, ripe fruit complemented by a hint of brioche and a wonderful, soft mouth feel. FOOD MATCHING A concentrated full flavour wine, with not too much acidity makes it perfect to pair with a meaty white fish, like monkfish; for the cheese lover: a ripe camembert.
