Description VITICULTURE Calem Port, founded in 1859 by Antonio Alves Calem, has a rich history of four generations. Since releasing its first Vintage Port in 1870, Calem has gained a reputation for being one of the Douro’s most celebrated Port producers. The imposing winery is situated in Vila Nova de Gaia, on the south bank of the Douro River, and attracts around 150,000 visitors each year. WINEMAKING Hand-picked at the optimum time, the grapes are then destemmed, crushed and converted into wine through a process of careful maceration to extract their colour, tannins and aromas, enhanced by constant churning during fermentation. This takes place in stainless steel vats at a controlled temperature (between 28-30°C) until the right degree of sweetness (baumé) is achieved. At this point, grape brandy is added to create the final fortified wine. OAK TREATMENT TASTING NOTE Deep ruby-red colour with granate halo. Vibrant nose, full of young and fruity aromas. In the mouth it is firm, smooth and balance, revealing great freshness and strength. FOOD MATCHING Served plain, chilled or with ice, it is excellent as an aperitif, or equally delicious at any time of the day. Ideal with cheese or puddings made with chocolate.
